Let’s split the whole process in a few, very easy steps.



Step 1: Prepare the Washing Gun


Start first by taking the external washing gun and placing it on the upper tank of your Trittico Executive Evo. You’re gonna use it to flush out any residue and ensure a thorough clean.




Step 2: Fill the Upper Tank with Water


Press the water button to fill the upper tank with water. This water will be heated to the optimal temperature for cleaning, typically between 140°F to 160°F. Ensure that the upper lid is securely closed before proceeding.




Step 3: Heat the Water


Once the upper tank is filled with water, you can heat it up to the desired temperature. You can do that very easily just through the machine's heating settings. The correct temperature of 140-160°F (= 60-70°C) is crucial for the effectiveness of the whole cleaning process.




Step 4: Transfer Water to the Lower Tank


To begin the cleaning process, open the valve to allow water to flow from the upper tank into the lower tank.


However, it's important to only allow half of the water from the upper tank to flow down at once. Closing the butterfly valve after the first half prevents the entire upper tank from emptying at once. The reason why this detail is key, is that if you empty the whole tank at once, you won’t be able to activate a rinse cycle later.




Step 5: Manage Mixer Rotation


Pay close attention to the rotation of the mixer during the cleaning process. If left unchecked while emptying the tank, the rotation can cause water to splash and spread everywhere. You might not want to transform your shop into a swimming pool!


Stop the mixer rotation to prevent this from happening.




Step 6: Complete Water Transfer


After stopping the mixer rotation, you can now allow the remaining water from the upper tank to flow down into the lower tank. Again, ensure that the mixer rotation is stopped to prevent any splashing!




Step 7: Final Checks


Once all the water has been transferred to the lower tank and the cleaning process is complete, your work is done.


Just perform a final check to ensure that the batch freezer is clean and ready to use it.


If all surfaces are residue free and the machine appears to be in optimal working condition, you’re ready to churn gelato again!
